Sweet Corn and Bacon Pizza

This is the Ultimate Pizza ... (you're welcome) 

I know what you are thinking. WTH, did she just say corn and bacon pizza? I promise you I did not come up with this concoction on my own. People talk about all of the deep dish Chicago style pizza in the city, but this little hole in the wall called Bubamara at Wilson and Wolcott had the best pizza in Chicago.. You think you are being crazy with pineapple and ham? They even had a pizza with strawberries on it. When a friend brought this over, I scoffed, and then quickly it became my favorite combination ever. The only change we have added, is we pile arugula on top for some extra greens (after it’s baked). Also, introducing my kids to making a stuffed crust could cost me cheese sticks for life.

  • Pizza Dough I’ve been quite fond of this recipe
  • Mozzarella cheese sticks
  • Mozzarella shredded cheese
  • Pizza Sauce
  • 6 Crispy bacon strips (pre-bake)
  • Can of sweet corn
  • Parmesan cheese
  • Olive Oil
  • Arugula (optional)

How to assemble your pizza:

  1. Flour your surface and roll out your dough. Don’t forget to use a fork all over the dough so you don’t get bubbles ...
  2. Brush your dough with olive oil
  3. Roll cheese sticks around edges of pizza to create a stuffed crust
  4. Sauce your dough
  5. Add Mozzarella cheese
  6. Add chopped bacon, then your sweet corn
  7. Add a sprinkle of parmesan cheese
  8. Bake at 475 for 12 minutes or until golden brown (time varies depending on your oven)
  9. Once cooled, top with a generous helping of arugula for a peppery crunch (and added greens! Does this make it healthier too?)
